Ingredients:

  • 2 (6 oz) salmon fillets
  • 1 cup quinoa, cooked and cooled
  • 1 avocado, diced
  • 1/2 red onion, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • Lemon juice from 1 lemon
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Dressing:

  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • Salt and pepper

Instructions:

Cook Salmon: Season with salt and pepper, and cook in olive oil over medium-high heat until done. Flake into pieces.
